Start dates tell you when to BEGIN working on something. Deadlines tell you when it's DUE. If you set a start date three days before your deadline, you have three days to actually do the work. If you only set a deadline, you'll start when you notice it's due - which is usually after it's already late.

It's all highly mathematical. (Due Date - Start Date) = Time Left to Work.
